Takikomi Gohan: Seasoned Rice Cooked with Chestnuts and Maitake Mushrooms

Cook rice with an equal amount of water (1:1 ratio) to create plumpy, moderately firm rice.

Ingredients Serves 3–4 people

Rice that has been soaked
500g

*Rice that has been lightly rinsed 3 times, soaked for 45 min., and then drained (approx. 380g before soaking)

Chestnuts
100g
Maitake mushrooms (hen-of-the-woods)
100g
Rice Pot Soup Stock
500g

Directions

Step1Peel the chestnuts and cut up the maitake mushrooms.
Step2Place all the ingredients in a rice cooker and cook.
Step3When it has finished cooking, mix well and enjoy.

Change the Rice Pot Soup Stock to soup stock with a chicken powder base for a Chinese-style dish, a consommé soup base for an Italian-style dish, and a bonito-based stock for a Japanese-style dish.
